Development of frozen sushi, a long-cherished dream of my mother's

The reason we decided to renew our product line was, of course, to improve the taste, but we also wanted to develop a frozen sushi product. In fact, my mother had been saying that she wanted to make frozen sushi for about 25 years, and around 2003 she purchased an instant-freezing machine, but she was unable to commercialize it because she just couldn't get a satisfactory result. That is when I came across the Proton Freezer. Among all the freezers that I tried after the COVID-19 pandemic and being released by various companies, the sushi made with the Proton was remarkably delicious.

Battera is a product whose taste changes with time, such as the tightness of the vinegar. At Kiyohiro Foods, sushi is made in the middle of the night, so it takes at least 4 to 5 hours for the product to reach the customer. When it comes to products sold at train stations and airports, it is difficult to deliver the same taste because it is unclear when the product will reach the customer. However, with frozen sushi, the customer can eat it at his or her own convenience after thawing, so not only is the taste of freshly made sushi delivered, but the taste can be adjusted to suit his or her preferences, which I feel is the greatest advantage.

We have successfully frozen oshisushi, and with our Proton Freezer, we can now deliver this Fukuoka-exclusive product to all of Japan. Although we have renewed our product by paying careful attention to the ingredients, this is not the final product. We will continue to make improvements and create products that everyone will enjoy.
